The ULTIMATE Duck & Pheasant Pie Recipe

For chef Melissa Hemsley this looks like mirroring the real ingredients of Carnilove’s UK bestseller and cooking a delicious duck & pheasant dish. For Nelly, it was only fitting to go for something just as scrumptious, Carnilove Duck & Pheasant dog food.

Melissa said: “Most of you know that sweet Nelly is my first love, and I couldn’t not celebrate this Valentine’s without involving the good girl. To ensure Nelly is not left out of the fun with me and Henry, I’ve created a unique duck & pheasant pie recipe inspired by Nelly’s food from Carnilove”.

Ingredients Needed:
For the pie

  • Olive oil
  • 2 onions or 6 shallots, finely diced
  • 2 carrots, finely diced
  • 2 celery, finely diced
  • 200ml red wine
  • 150g roughly chopped pheasant breast
  • 350g roughly chopped diced duck breast
  • 2 tbsp chickpea flour
  • 1 tbsp tomato puree
  • 2 fresh thyme sprig or 1/2 tsp dried
  • 2 fresh rosemary sprig or 1/2 tsp dried
  • 2 garlic cloves, finely diced
  • 500ml chicken stock
  • sea salt & pepper
For the mash
  • 1 small pumpkin or squash, peeled & deseeded, fresh roughly chopped, roughly 600g weight
  • 3 tbsp milk
  • 3 tbsp butter
  • sea salt & pepper to taste

Method:

  1. Fry the onions, carrots and celery in olive oil
  2. Add thyme, rosemary, garlic and tomato puree
  3. Set aside
  4. In the same pan, dust the meat with flour, salt and pepper and brown for a few minutes on each side with a little extra oil
  5. Add everything together with wine and the chicken stock
  6. Meanwhile simmer the pumpkin chunks in salted water until tender. Mash with milk, butter and salt
  7. Transfer everything to a tin, top with mash and shuzzzh up the mash
  8. Bake for 20 minutes until the top is golden brown
  9. Serve with buttered cabbage and a kiss from the sous chef
